is there a way of upgrading the stock hydraulic brakes on the
F600/700 trucks?

Also, if you want to upgrade you can reline the shoes with a better material.

What do you mean by upgrade ?
If you have a single brake system and want to upgrade to a dual system, salvage the parts from a school bus. A bus will have dual master cylinder, dual brake boosters and dual brake lines to all wheels.
