I myself would not do it because of the dual plane intake manifold that you now have on your truck. The factory put two barrel carbs on V8 engines and single barrel carbs on inline 6 cylinders for a reason.
I'd simply rebuild it. If you absolutely will not rebuild your present carb, you can get generic factory rebuilt Holley carbs for ~$225 from Summit racing and probably cheaper if you went elsewhere. My $.02 worth.
