no real way to say the word 'restored' has different meanings to different people, it can range from a rattle can paint job, seat, and new tires on an original truck to a full rotisserie restoration down to the last nut and bolt, winding up with a rare and basically better than brand new truck, value would change according to the level of restoration done,best bet is contact a insurance adjuster who places value on antique vehicles and have him appraise it, he will know what to look for and where to look for it, and arrive at a fair market value

Firstly, what engine is it and has it been rebuilt. The 4 cylinder Lycomings have a serious oil pump issue. maybe the sixes too. Secondly, is the wood new in the cab, and if so, is it properly done. All this affects value, so you need to do some research. could be a $5,000 truck, or less. Could be a $20,000 one.
