Start it with the air cleaner cover off. Shine a flashlight at the throttle plate. When it's running you should be able to see the injectors spraying fuel at the plate. When it dies, the fuel spray will either stop abruptly or keep going until the motor has stopped. Most likely the shut off is related to engine temperature. Coil failure will kill spark but not fuel, ignition module breakdown will shut off fuel and spark. A bad thermal switch could cause the unit to ground out killing both. Immediately after it stalls, put 2 tablespoons of gas down the throttle plate and crank it. If its problem is fuel it will fire up for a second. If its spark it will do nothing. For fuel, think o2 sensor (it thinks it has enough fuel already) or temperature sensor (it think's it's hot and leans out the engine). Spark, think ignition module and/or coil. I had a bad Accel plug wire on my 1990 4.3, and it would blow a coil and ignition module once a year. New module, coil, and GM wires fixed it forever.
