You could easily drop a small block chevy in there but why would you do that? Unless you change the transmission the gear ratios are the same and the V8 will turn up to 4000 and the truck will move along at the same speed as when the 292 spins up to 4000. The ONLY thing you will gain is a quicker start--maybe. Those 292 have a lot of REAL power--torque. If you want more horsepower why not change the intake for a 2 or 4 barrel carb and adjust the cam.
I have a C-60 which is in the same category you are talking about and while she's not fast she always gets there and gas lasts alot longer then in a V8. Course I load 400 bu of corn on it (about 12 ton), empty weight is 8000 lb so the loaded weight is close to 16 ton.
