Ignore the Chevy suggestion !!! Stick with Ford.
351 and 302 are fine set ups, and the EFI suggestion is good.
I'm a big block guy and suggest you look into an FE engine (352,360, 390 or 428). They bolt right in with correct motor mounts. Lots of power !!! Of course, they are antiques themselves but tremendously tough engines. I've got a 428CJ in a '47 Ford coupe with a C-6 auto. Fabulous road car.
