I don't know what a horse weighs, but I think I would go with a one ton. I prefer the older ones, and back then, the designation didn't mean jack. My one ton Longhorn '70 Chevy has gross vehicle weight of 10,000 pounds. It weighs less than 5,00, so it will haul almost 3 tons of crap. Ain't nothing stopping that beast. (even the 4 wheel drums...they won't stop it either)
Get as much truck as you can afford. The bigger it is, the better it'll handle your load. If you get one that hardly takes the weight, you'll regret it.
Then get the best hitch you can. 5th wheel is great, calss 4 is pretty awsome too though.
