Best Ford Engine

I have a 1978 Ford Bronco with a doggy 351M that only gets about 8 mpg. I am going to restore this Bronc and want a good power and mileage combo. Is there a way to fix the doggieness of this engine? I have heard of using a different timing set? Does this work, If so which set.
I have heard many people complain about the 351M and say that it is nothing more than a boat anchor. So, what kind of engine should I build for this truck? 390, 429,460 others?? Also what kind of horse and what kind of mileage and what kind of money am I going to be looking at. I can do everything except the actual machine work myself.
