chevy wont stay running

got a 78 scotsdale with 350. Been run hot severla times, without water(old junker farm truck with big radiador leak.Anyway started acting up would run good then just quit like starving for fuel. If you keep your foot in the gas will run fine. Try to let it idle runs 10 secs then cuts off. If you hold the gas when it cuts off gas and blue smoke blow out of carb. had my gm mechanic friend rebuild the carb put it on ran great for about 30 mins and here and there. Now i'm back to the same old run the quit anybody got any suggestions?
