I have seen several different types myself. Most of the are pre terminated so you don't have to re use the old stuff.
Some of the more custom harnesses like the ones from Painless Wiring , etc. are complete, but are not original. So, if you are doing a restoration, that is not the type you want. If not, they are pretty convenient if expensive.
On something simply like a 50's GM, I would be tempted to make my own. You are going to have to trace all the ends down and do the install anyway, and making the harness after that is not that difficult. One thing I would suggest if you make your own is to buy a really good set of crimping pliers. The cheap ones are a nightmare on a job of even only 25 wires.
