55 Chevy - Newbie

I recently picked up a 55 Chevy 3200. First go-round with something this old. In re-doing the brakes, I found the front drums are attached to the hubs.

Is there any need for this?

What problems would I be creating if I simply separated by grinding off the head of the rivet?

Also, I am strongly considering changing over to roller bearings.
