A good tall hoist to lift it with is for starters. Lots of stuff to unhook: cab mounts, shifter boot and possibly the shifter lever, radiator, brake lines, parking brake lines, wires and more wires, steering linkage but some just slip apart like a driveshaft. Once its up it has to clear the engine/tranny and front suspension towers. Is the donor cab off of an F150, F250, F350 and is it the same year? Do you have a title from the donor cab? Here in Minnesota they are REALLY picky about changes to a vehicle like that and they determine what a truck can safely haul by the door sticker and not the chassy it sits on. The frame number should be on the top of the frame rail under where the passengers feet would be (on the frame). I have taken cabs off by myself but never put one on. It can be done. After your have it all unhooked as you lift up the cab often you see the wires/lines you didn't get unhooked(be very carefull). The biggest pain is the wiring and marking the wires. It will be a bit more complicated if the donor cab is wired for a different motor.
