On my 71 chevrolet 350 I have an Edelbrock Performer manifold, and 600cfm Eldelbrock Performer carb that has worked well for 8 years. It has a hand choke, as usual in cold weather I let it warm up. The Edelbrock Performer is a Carter AFB clone. They also make a Quadrajet replacement, for more money. Holly also has some good replacement street carbs too. For the money an Edelbrock carb is a deal. I remember when I had an 83 Caprice and Chevy only wanted $1300 for a new carb, and then stopped selling them. Good luck. Have a merry Christmas.
