The Org. engine would have either been a 302 -390 in the v 8's as they offered the 302 a 360 and a 390 . The 351's did not raise the ugly heads till the introduction of the 77 year models . As for your carb problems with the truck setting for that lenght of time i would myself pull the carb and do a total rebuild with a master kit and in the kit will come the accelator pump and a new power valve, needel and seat .
