I had some squirly oil pressure problems in a Vanagon lateley. Turned out to be a bad oil filter bypass valve.

Try changing oil again and this time use a NAPA filter or other high end oil filter. DON'T use FRAM.

You might also change your oil pressure sending unit. They don't cost much and can go bad.
