It sounds like a great old truck :)
I've been doing research lately on Ford engines, my Dad has picked up a 1-ton with a badly-knocking 351C and I've got a 351M and C6 ready to drop in when he gets it moved up here to the farm.
I think you did so well because of the automatic, that extra 'slip' in the lower gears allowed the 351C to wind out in its best power-band and I'm sure the 'economy' differential bought you a few extra MPG at full speed.
The ratios in a car-automatic are pretty similar to the truck unit but it might have been getting a little hotter and shifting a little later with the extra work it was doing in your truck.
351Cs are getting a little thin on the ground but I bet you can find something just as 'fun' if you're not up for rebuilding the old one
