You might be able to find a larger truck 5 speed that would bolt up to an engine of that era, and that transmission would give you a "granny" low for hauling something. However, I don't think Ford offered 5 speeds in pickups at that time, and the transmission might be much larger than the one it replaces. And I don't think they were overdrive transmissions. Or you could go with a 5 speed transmission that was designed for cars. If the 3 speed has worked out OK for you, as far as durability is concerned, this might be the way to go. I would try to get a 5 speed with the low gear about the same ratio as the 1st gear in the 3 speed, or a bit lower. There are several choices. I would think that a T5 might be a little light for half ton pickup use, especially if you have a 360 or 390, and you might end up breaking it quickly. There is a company named Keisler that has put out kits to use various 5 and 6 speed transmissions in lots of vehicles, mostly musclecars. You might want to look them up on the internet. But I think you will have several thousand dollars of investment to get such a kit working and on the road. If you are just looking for an overdrive, I think that Ford still sold some 3 speeds with overdrive in the 60's, but it might be tough to find one today. But probably a lot cheaper than buying a kit with a brand new 5 or 6 speed transmission. Good luck!
