JC, This is an idea I've seen put to use twice, Take the cab from an old COE like you've got, get a motor home 1-1/2 ton chassis, from a wreck perhaps, mate the two together, you've got a long wheel base modern driveline with wheels that look right, cable shifter with automatic transmission, PS, cable throttle, etc. Makes one neat car or small tractor hauler.
