I put a gauge on a 2001 3/4 ton Chevy earlier this year. My favorite tranny shop had a complete kit, consisting of electric gauge wiring, and a brass tee. The tee goes in the line TO the oil cooler, and the sensor goes in the extra port in the tee. No need to drop the pan, or lose more than a fraction of a cup of oil. Can't remember the brand name tonight, but I'm sure most tranny shops would have them. The reading should be pretty close to the actual temp. of the oil in the pan, as the oil is picked up by the pump, and the excess goes to the cooler, and passes the sensor on the way.
