351M Vs. 300 Straight Six

Can anyone explain the good points of each? the 351 is a 79 and the 300 is an 84. I am getting 11 MPG with the 351, can I expect a lot better with the 300? the 351 is hooked to a C6 in a 4400 lb F250, the 300 is hooked to a 3 sp + Overdrive in a F150. I like my beast, but gas is killing me and goin higher :-(
