Converting to 12V

When I restore my "41" Chevy, I would like to convert it to 12V. Chevy's were always negative ground, so that is not a problem. I am not worried about the starter, because if the engine is tuned up good it does not run that long. The water temp and oil pressure are mechanical. The ammeter should not matter as long as it is DC amperes that it is reading.

If I put a ballast resistor on the fuel gauge and the coil will that do the job. I am planning to change all of the lights to 12V bulbs.
